Indonesian Grilled Fish with Sambal Matah

Ingredients

  • 4 pieces Fish fillets (such as snapper or grouper)
  • 3 tablespoons Lime juice
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 cup Sambal Matah - see below

Sambal Matah

  • 7 whole red chilies
  • 3 whole shallots
  • 2 cloves garlic
  • 2 leaves kaffir lime
  • 1 tablespoon lime juice
  • 1 whole lemongrass stalk
  • 3 tablespoons olive oil

Instructions

  1. In a bowl, mix lime juice, salt, and pepper. Marinate the fish fillets in this mixture for at least 1 hour in the fridge.
  2. For the Sambal Matah: In a separate bowl, combine sliced chilies, shallots, finely sliced kaffir lime leaves, finely sliced lemongrass stalk (tender white parts only), minced garlic, lime juice and olive oil.
  3. Preheat the grill to medium-high heat. Grill the marinated fish fillets for 4-5 minutes on each side or until cooked through.
  4. Serve the grilled fish with a generous topping of Sambal Matah on top.

Notes

  • Make sure to marinate the fish for at least 1 hour for best flavor
  • Adjust the number of chilies to taste - between 6-10 is good for this dish
