Ingredients
- 240 mls (1 cup) sushi rice
- 1 avocado
- 1 cucumber
- 1 carrot
- 1 tbsp sesame seeds
- 2 tbsps soy sauce
- 1 tbsp rice vinegar
Instructions
- Cook the sushi rice according to package instructions and let it cool.
- Cut the avocado, cucumber, and carrot into thin slices.
- In a small bowl, mix soy sauce and rice vinegar.
- In a serving bowl, place the cooked sushi rice at the bottom.
- Arrange the avocado, cucumber, and carrot slices on top of the rice.
- Drizzle the soy sauce and vinegar mixture over the vegetables and rice.
- Sprinkle sesame seeds on top.
