Vegetarian Shepherd's Pie

Ingredients
- 4 Potatoes
- 2 Carrots
- 1 Onion
- 2 Garlic cloves
- 240 mls (1 cup) Green peas
- 240 mls (1 cup) Corn
- 240 mls (1 cup) Vegetable broth
- 2 tbsps Tomato paste
- 2 tbsps Olive oil
- 1 tsp Salt
- 1 tsp Pepper
Instructions
- Peel and chop the potatoes. Boil them until they are soft, then mash them with a little salt and pepper.
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Add chopped onions and garlic. Cook until they are soft and translucent.
- Add diced carrots and cook for a few minutes until they start to soften.
- Stir in green peas and corn. Add vegetable broth and tomato paste. Simmer for about 10 minutes.
- Season the filling with salt and pepper to taste.
- Transfer the vegetable mixture to a baking dish. Spread the mashed potatoes on top.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden brown.
- Remove from the oven and let it cool slightly before serving. Enjoy your Vegetarian Shepherd's Pie!
