  • 4 Potatoes
  • 2 Carrots

  • 2 Garlic cloves
  • 240 mls (1 cup) Green peas
  • 240 mls (1 cup) Corn
  • 240 mls (1 cup) Vegetable broth
  • 2 tbsps Tomato paste
  • 2 tbsps Olive oil
  • 1 tsp Salt
  • 1 tsp Pepper

Instructions

  1. Peel and chop the potatoes. Boil them until they are soft, then mash them with a little salt and pepper.
  2. Preheat the oven to 400°F (200°C).
  3. In a large skillet, heat olive oil over medium heat. Add chopped onions and garlic. Cook until they are soft and translucent.
  4. Add diced carrots and cook for a few minutes until they start to soften.
  5. Stir in green peas and corn. Add vegetable broth and tomato paste. Simmer for about 10 minutes.
  6. Season the filling with salt and pepper to taste.
  7. Transfer the vegetable mixture to a baking dish. Spread the mashed potatoes on top.
  8. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown.
