  • 240 mls (1 cup) arborio rice
  • 480 mls (2 cups) vegetable broth
  • 1 saffron threads, pinch
  • 1 tomato large, diced
  • 240 mls (1 cup) frozen peas
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 lemon sliced, for garnish

Instructions

  1. In a large paella pan, heat the olive oil over medium heat.
  2. Add the onion, bell peppers, and garlic. Cook until vegetables are softened, about 5 minutes.
  3. Add the vegetarian sausage and cook until browned, about 5 minutes.
  4. Stir in the arborio rice, vegetable broth, saffron threads, tomato, peas, salt, and black pepper.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes or until the rice is tender.
  6. Remove from heat and let it sit for 5 minutes before serving.
  7. Garnish with lemon slices before serving.
