Ingredients
- 2 tbsps olive oil
- 1 onion large, chopped
- 1 red bell pepper large, chopped
- 1 yellow bell pepper large, chopped
- 3 garlic cloves, minced
- 2 sausage links, sliced (vegetarian option)
- 240 mls (1 cup) arborio rice
- 480 mls (2 cups) vegetable broth
- 1 saffron threads, pinch
- 1 tomato large, diced
- 240 mls (1 cup) frozen peas
- 1 tsp salt
- 1 tsp black pepper
- 1 lemon sliced, for garnish
Instructions
- In a large paella pan, heat the olive oil over medium heat.
- Add the onion, bell peppers, and garlic. Cook until vegetables are softened, about 5 minutes.
- Add the vegetarian sausage and cook until browned, about 5 minutes.
- Stir in the arborio rice, vegetable broth, saffron threads, tomato, peas, salt, and black pepper.
- Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes or until the rice is tender.
- Remove from heat and let it sit for 5 minutes before serving.
- Garnish with lemon slices before serving.
