Ingredients

  • 2 canned young green jackfruit cans
  • 2 tbsps olive oil
  • 1 yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 240 mls (1 cup) bbq sauce
  • 240 mls (1 cup) vegetable broth
  • 1 tsp smoked paprika
  • 0.5 tsp chili powder
  • 0.5 tsp cumin
  • 0.5 tsp salt
  • 0.25 tsp ground black pepper
  • 4 burger buns
  • 1 coleslaw cup (optional)
  • 0.5 pickles cup (optional)

Instructions

  1. Drain and rinse the jackfruit. Cut off the core portions and discard any seeds. Use your hands to shred the jackfruit pieces into a large bowl, resembling pulled pork.
  2. In a large skillet or sauté pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Add the shredded jackfruit to the pan and sauté for about 5 minutes.
  4. Stir in the BBQ sauce, vegetable broth, smoked paprika, chili powder, cumin, salt, and black pepper. Simmer the mixture over medium-low heat for about 20-25 minutes, stirring occasionally, until the jackfruit is tender and has absorbed most of the liquid.
  5. Preheat your grill or a grill pan on medium-high heat. Grill the burger buns until they're toasted and slightly charred.
  6. Pile the BBQ jackfruit onto the toasted buns. Top with coleslaw and pickles if using. Serve immediately and enjoy your Vegetarian BBQ Jackfruit Sandwiches!

Notes

  • Jackfruit mimics the texture of pulled pork, making it a great vegetarian alternative.
  • Serve with your favorite coleslaw or pickles for added crunch.
