- 2 canned young green jackfruit cans
- 2 tbsps olive oil
- 1 yellow onion, finely chopped
- 3 garlic cloves, minced
- 240 mls (1 cup) bbq sauce
- 240 mls (1 cup) vegetable broth
- 1 tsp smoked paprika
- 0.5 tsp chili powder
- 0.5 tsp cumin
- 0.5 tsp salt
- 0.25 tsp ground black pepper
- 4 burger buns
- 1 coleslaw cup (optional)
- 0.5 pickles cup (optional)
Instructions
- Drain and rinse the jackfruit. Cut off the core portions and discard any seeds. Use your hands to shred the jackfruit pieces into a large bowl, resembling pulled pork.
- In a large skillet or sauté pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the shredded jackfruit to the pan and sauté for about 5 minutes.
- Stir in the BBQ sauce, vegetable broth, smoked paprika, chili powder, cumin, salt, and black pepper. Simmer the mixture over medium-low heat for about 20-25 minutes, stirring occasionally, until the jackfruit is tender and has absorbed most of the liquid.
- Preheat your grill or a grill pan on medium-high heat. Grill the burger buns until they're toasted and slightly charred.
