  • 1 Avocado, large
  • 2 Nori sheets

Instructions

  1. Press the tofu to remove excess water. Cut the tofu into cubes.
  2. In a bowl, mix soy sauce, rice vinegar, and maple syrup. Add the tofu cubes to the marinade and let it sit for at least 30 minutes.
  3. Cook sushi rice according to package instructions.
  4. Cut cucumber, carrots, and avocado into strips.
  5. Cut the nori sheets into thin strips.
  6. Assemble the bowl by placing sushi rice at the bottom, arranging marinated tofu, cucumber, carrots, avocado, and nori strips on top.
  7. Drizzle with remaining marinade or soy sauce before serving.
