Ingredients
- 480 mls (2 cups) mushrooms
- 1 black beans can
- 1 onion, medium
- 2 garlic cloves
- 2 tbsps taco seasoning
- 8 tortillas
- 1 avocado
- 1 lime
- 1 cilantro bunch
- 1 tsp salt
- 1 tsp pepper
Instructions
- Heat a skillet over medium heat and add a little oil.
- Add diced onions and minced garlic to the skillet, and sauté until onions are translucent.
- Add sliced mushrooms, taco seasoning, salt, and pepper to the skillet. Cook until mushrooms are tender.
- Rinse and drain the black beans, then add them to the skillet. Stir well to combine all ingredients and heat the beans through.
- In a separate skillet, heat the tortillas until warm.
- To make the avocado crema, blend the ripe avocado, lime juice, cilantro, salt, and pepper in a blender until smooth.
- Assemble the tacos by spooning the mushroom and black bean mixture onto each tortilla, topping with avocado crema, and additional cilantro.
- Serve hot and enjoy!
