Ingredients
- 2 canned young green jackfruit
- 240 mls (1 cup) bbq sauce
- 2 tbsps olive oil
- 1 onion
- 2 garlic cloves
- 1 tsp smoked paprika
- 720 mls (3 cups) cabbage
- 1 carrot
- 240 mls (1 cup) vegan mayo
- 2 tbsps apple cider vinegar
- 1 tbsp maple syrup
- 1 tsp salt
- 1 tsp black pepper
- 4 burger buns
Instructions
- Drain and rinse the canned jackfruit. Cut off the core and shred the pieces by hand or with a fork.
- Heat the olive oil in a large pan over medium heat. Add the finely chopped onion and minced garlic. Sauté until translucent.
- Add the shredded jackfruit to the pan along with smoked paprika. Stir well and cook for about 10 minutes.
- Pour in the BBQ sauce and stir to combine. Let it simmer for another 20 minutes, stirring occasionally.
- While the jackfruit is cooking, prepare the coleslaw. In a large bowl, combine the shredded cabbage and grated carrot.
- In a separate small bowl, whisk together the vegan mayo, apple cider vinegar, maple syrup, salt, and black pepper.
- Pour the dressing over the cabbage and carrot mixture. Toss well to coat evenly.
- Toast the burger buns lightly if desired.
- Assemble the sandwiches by placing a generous amount of the BBQ jackfruit on the bottom bun, followed by a scoop of coleslaw, and then the top bun.
