- 480 mls (2 cups) canned jackfruit
- 240 mls (1 cup) BBQ sauce
- 1 onion medium, sliced
- 2 garlic cloves, minced
- 240 mls (1 cup) vegetable broth
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
- 4 hamburger buns
Instructions
- Drain and rinse the jackfruit. Remove the core of the jackfruit and shred it with a fork.
- In a pan, heat the olive oil. Add the onion and garlic, and cook until translucent.
- Add the shredded jackfruit, BBQ sauce, vegetable broth, salt, and pepper to the pan. Stir well to combine.
- Simmer for 20-30 minutes, stirring occasionally, until the jackfruit is tender and the sauce has thickened.
- Toast the hamburger buns, then spoon the BBQ jackfruit mixture onto the buns.
