Turkish Spiced Tofu Kebabs with Grilled Vegetables

Ingredients
- 450 gms (1 lb) extra-firm tofu
- 2 bell peppers
- 1 red onion
- 240 mls (1 cup) cherry tomatoes
- 2 tbsps olive oil
- 1 lemon
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp black pepper
- 4 wooden skewers
Instructions
- Press tofu to remove excess water, then cut into cubes.
- In a bowl, combine olive oil, lemon juice, cumin, paprika, garlic powder, salt, and black pepper to make the marinade.
- Marinate the tofu cubes in the spice mixture for at least 30 minutes.
- Cut bell peppers and red onion into chunks.
- Thread marinated tofu, bell peppers, red onion, and cherry tomatoes onto skewers.
- Grill the kebabs over medium-high heat for about 10-12 minutes, turning occasionally.
- Serve hot with a side of salad or rice.
