Ingredients
- 4 chicken thighs
- 2 tbsps olive oil
- 1 onion large, chopped
- 3 garlic cloves, minced
- 2 tomato medium, chopped
- 1 red bell pepper large, chopped
- 240 mls (1 cup) long grain rice
- 480 mls (2 cups) chicken broth
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp black pepper
Instructions
- In a large skillet, heat olive oil over medium-high heat.
- Add chicken thighs and cook until browned, about 5 minutes per side. Remove from skillet and set aside.
- In the same skillet, add onion and garlic. Cook until softened, about 3 minutes.
- Stir in tomato, bell pepper, rice, chicken broth, cumin, oregano, salt, and black pepper.
- Place the chicken thighs on top of the mixture.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until rice is cooked and chicken is tender.
- Serve the Turkish Chicken Pilaf hot and enjoy!
