Ingredients

  • 4 chicken thighs
  • 2 tbsps olive oil
  • 1 onion large, chopped
  • 3 garlic cloves, minced
  • 2 tomato medium, chopped
  • 1 red bell pepper large, chopped
  • 240 mls (1 cup) long grain rice
  • 480 mls (2 cups) chicken broth
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add chicken thighs and cook until browned, about 5 minutes per side. Remove from skillet and set aside.
  3. In the same skillet, add onion and garlic. Cook until softened, about 3 minutes.
  4. Stir in tomato, bell pepper, rice, chicken broth, cumin, oregano, salt, and black pepper.
  5. Place the chicken thighs on top of the mixture.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until rice is cooked and chicken is tender.
  7. Serve the Turkish Chicken Pilaf hot and enjoy!
