  • 240 mls (1 cup) Bulgur
  • 480 mls (2 cups) Chicken broth
  • 2 tbsps Tomato paste
  • 2 tbsps Butter

Instructions

  1. Grate the onion and finely chop the garlic.
  2. In a large mixing bowl, combine ground beef, grated onion, chopped garlic, breadcrumbs, ground cumin, ground paprika, ground black pepper, salt, and chopped parsley.
  3. Using your hands, mix everything together until well combined.
  4. Shape the mixture into oval patties, about the size of an egg.
  5. Heat the olive oil in a grill pan over medium-high heat.
  6. Grill the koftes for about 4-5 minutes on each side, or until cooked through.
  7. For the bulgur pilaf, melt the butter in a saucepan over medium heat.
  8. Add bulgur and toast for 2-3 minutes, stirring constantly.
  9. Add chicken broth and tomato paste to the pan, stir to combine.
  10. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the bulgur is tender and has absorbed the liquid.
