- 1 Onion
- 3 Garlic cloves
- 50 gms (0.11 lb) Breadcrumbs
- 2 tsps Ground cumin
- 1 tsp Ground paprika

- 1 tsp Salt
- 30 gms (0.07 lb) Chopped parsley
- 2 tbsps Olive oil
- 240 mls (1 cup) Bulgur
- 480 mls (2 cups) Chicken broth
- 2 tbsps Tomato paste
- 2 tbsps Butter
Instructions
- Grate the onion and finely chop the garlic.
- In a large mixing bowl, combine ground beef, grated onion, chopped garlic, breadcrumbs, ground cumin, ground paprika, ground black pepper, salt, and chopped parsley.
- Using your hands, mix everything together until well combined.
- Shape the mixture into oval patties, about the size of an egg.
- Heat the olive oil in a grill pan over medium-high heat.
- Grill the koftes for about 4-5 minutes on each side, or until cooked through.
- For the bulgur pilaf, melt the butter in a saucepan over medium heat.
- Add bulgur and toast for 2-3 minutes, stirring constantly.
- Add chicken broth and tomato paste to the pan, stir to combine.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the bulgur is tender and has absorbed the liquid.
- Fluff the bulgur with a fork and serve alongside the grilled koftes.
