Ingredients
- 500 gms (1.11 lbs) beef sirloin or tenderloin
- 4 tbsps olive oil
- 2 tbsps lemon juice
- 2 garlic cloves
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp salt
- 1 tsp black pepper
- 2 red bell pepper
- 2 zucchini
- 1 red onion
- 200 gms (0.44 lb) cherry tomatoes
Instructions
- Cut the beef into 1-inch cubes.
- In a bowl, mix the olive oil, lemon juice, minced garlic, paprika, ground cumin, ground coriander, salt, and black pepper.
- Add the beef cubes to the marinade and coat them well. Refrigerate for at least 2 hours, preferably overnight.
- Soak wooden skewers in water for 30 minutes if using wooden skewers.
- Preheat the grill or oven to 200°C (400°F).
- Cut the red bell peppers and zucchini into chunks, and the red onion into wedges.
- Thread the marinated beef, red bell pepper, zucchini, red onion, and cherry tomatoes onto skewers, alternating between vegetables and meat.
- Grill the skewers for about 10-15 minutes, turning occasionally, until the beef is cooked through and the vegetables are tender and slightly charred.
- Serve the kebabs hot with flatbread or rice and a side of yogurt sauce.
