Ingredients

  • 4 firm white fish fillets
  • 2 bell peppers
  • 4 tomatoes
  • 1 onion
  • 4 tbsps olive oil
  • 1 lemon
  • 2 garlic cloves
  • 2 tsps dried oregano
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Slice the bell peppers, tomatoes, and onion. Place them in a baking dish.
  3. Place the fish fillets on top of the vegetables.
  4. In a small bowl, mix olive oil, juice of one lemon, minced garlic, dried oregano, salt, and black pepper. Pour this mixture over the fish and vegetables.
  5. Cover the baking dish with foil and bake for 25-30 minutes, or until the fish is cooked through.
