Tonkatsu - Japanese Breaded Pork Cutlet

Ingredients
- 4 Pork Loin
- 1 tsp Salt
- 1 tsp Ground black pepper
- 240 mls (1 cup) All-purpose flour
- 2 Eggs
- 480 mls (2 cups) Panko breadcrumbs
- 480 mls (2 cups) Vegetable oil
Instructions
- Pound the pork loin slices to about 1/4 inch thickness.
- Season both sides of the pork slices with salt and pepper.
- Dredge each pork slice in flour, then dip in beaten eggs, and coat with panko breadcrumbs.
- Heat vegetable oil in a pan over medium heat.
- Fry the breaded pork slices until golden brown on both sides.
- Remove from pan, drain excess oil on paper towels.
- Slice the tonkatsu and serve with tonkatsu sauce, shredded cabbage, and steamed rice.
