Tofu Souvlaki with Tzatziki Sauce

Ingredients
- 400 gms (0.89 lb) extra-firm tofu
- 2 tbsps olive oil
- 2 tbsps lemon juice
- 3 garlic cloves
- 2 tsps dried oregano
- 1 tsp dried thyme
- 0.5 tsp salt
- 1 cucumber
- 240 mls (1 cup) Greek yogurt
- 2 tbsps fresh dill
- 2 tbsps fresh mint
- 0.5 tsp salt
- 0.25 tsp black pepper
Instructions
- Press the tofu to remove excess water. Cut it into 1-inch cubes.
- In a bowl, mix olive oil, lemon juice, minced garlic, oregano, thyme, and salt. Add tofu cubes and marinate for at least 30 minutes.
- While the tofu marinates, prepare the tzatziki sauce. Grate the cucumber and squeeze out excess water.
- In a bowl, combine the grated cucumber, Greek yogurt, chopped dill, chopped mint, salt, and black pepper. Mix well and refrigerate until ready to use.
- Preheat a grill or grill pan over medium heat. Thread the marinated tofu cubes onto skewers.
- Grill the tofu skewers for about 5-7 minutes on each side, or until they are golden brown and cooked through.
- Serve the tofu souvlaki with the tzatziki sauce on the side or drizzled over the top.
