Ingredients

  • 1 Tofu block
  • 4 Pita bread
  • 2 Bell peppers
  • 1 Zucchini
  • 1 Red onion
  • 240 mls (1 cup) Cherry tomatoes
  • 240 mls (1 cup) Hummus
  • 2 tbsps Olive oil
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • 1 tsp Garlic powder
  • 1 tsp Salt

Instructions

  1. Press the tofu to remove excess water, then cut into cubes
  2. In a bowl, mix olive oil, ground cumin, paprika, garlic powder, and salt. Add tofu cubes and marinate for at least 1 hour
  3. Preheat grill or grill pan over medium-high heat. Grill marinated tofu, bell peppers, zucchini, and red onion until vegetables are slightly charred and tofu is crispy
  4. Warm the pita bread on the grill
  5. To assemble, spread hummus on each pita bread, then top with grilled tofu, vegetables, and cherry tomatoes
  6. Serve the Tofu Shawarma with Hummus and Grilled Vegetables hot and enjoy!
