Tofu Shawarma with Hummus and Grilled Vegetables

Ingredients
- 1 Tofu block
- 4 Pita bread
- 2 Bell peppers
- 1 Zucchini
- 1 Red onion
- 240 mls (1 cup) Cherry tomatoes
- 240 mls (1 cup) Hummus
- 2 tbsps Olive oil
- 1 tsp Ground cumin
- 1 tsp Paprika
- 1 tsp Garlic powder
- 1 tsp Salt
Instructions
- Press the tofu to remove excess water, then cut into cubes
- In a bowl, mix olive oil, ground cumin, paprika, garlic powder, and salt. Add tofu cubes and marinate for at least 1 hour
- Preheat grill or grill pan over medium-high heat. Grill marinated tofu, bell peppers, zucchini, and red onion until vegetables are slightly charred and tofu is crispy
- Warm the pita bread on the grill
- To assemble, spread hummus on each pita bread, then top with grilled tofu, vegetables, and cherry tomatoes
- Serve the Tofu Shawarma with Hummus and Grilled Vegetables hot and enjoy!
Notes
- Marinate the tofu for at least 1 hour for best flavor
