Ingredients

  • 500 gms (1.11 lbs) Fish fillets
  • 3 tbsps Green curry paste
  • 400 mls (1.67 cups) Coconut milk
  • 2 tbsps Fish sauce
  • 1 tbsp Sugar
  • 240 mls (1 cup) Thai basil leaves
  • 2 Red chili peppers
  • 1 Bell peppers
  • 1 tsp Salt

Instructions

  1. Heat coconut milk in a pan over medium heat.
  2. Add green curry paste and cook for 2 minutes.
  3. Add fish fillets, fish sauce, sugar, and salt. Simmer for 5 minutes.
  4. Add sliced bell peppers, Thai basil leaves, and red chili peppers. Cook for another 3 minutes.
  5. Taste and adjust seasoning if needed.
  6. Serve hot with steamed rice.
