Ingredients
- 4 Cod fillets
- 240 mls (1 cup) Coconut milk
- 2 tbsps Lime juice
- 2 Garlic cloves
- 1 tsp Ginger
- 1 tsp Red chili flakes
- 1 tsp Salt
- 1 tsp Black pepper
- 2 tbsps Fresh cilantro
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together coconut milk, lime juice, minced garlic, grated ginger, red chili flakes, salt, and black pepper.
- Place the cod fillets in a baking dish and pour the coconut milk mixture over them.
- Bake in the preheated oven for 20-25 minutes, or until the cod is cooked through and flakes easily with a fork.
- Garnish with fresh cilantro before serving.
