Teriyaki Tofu with Steamed Rice and Miso Soup

Ingredients
- 400 gms (0.89 lb) firm tofu
- 60 mls (0.25 cup) soy sauce
- 60 mls (0.25 cup) mirin
- 2 tbsps sugar
- 2 garlic cloves
- 1 tsp ginger
- 1 tbsp cornstarch
- 480 mls (2 cups) rice
- 960 mls (4 cups) water
- 1 tsp dashi powder
- 2 tbsps miso paste
- 100 gms (0.22 lb) tofu (for soup)
- 2 green onions
- 1 tbsp wakame (dried seaweed)
Instructions
- Press the tofu: Wrap the tofu block in a clean kitchen towel and place a heavy object on top. Let it sit for about 15-20 minutes to remove excess water.
- Prepare the teriyaki marinade: In a bowl, mix soy sauce, mirin, sugar, minced garlic, and grated ginger. Once the tofu is pressed, cut it into cubes and marinate in the sauce for at least 30 minutes.
- Cook the rice: Wash the rice under cold water until the water runs clear. In a pot, combine rice and water (1:2 ratio) and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes or until the water is absorbed. Remove from heat and let it sit for 10 minutes.
- Make the miso soup: In a pot, bring 4 cups of water to a boil. Add the dashi powder and stir to dissolve. Lower the heat and add cubed tofu, chopped green onions, and rehydrated wakame. Stir in the miso paste until fully dissolved. Let it simmer for 5 minutes and then turn off the heat.
- Cook the teriyaki tofu: Heat a non-stick pan over medium-high heat. Remove the tofu from the marinade (save the marinade) and fry the tofu cubes until all sides are golden brown. Set aside.
- Thicken the marinade: In the same pan, pour the remaining marinade and heat until it starts to simmer. Add the cornstarch mixed with a little bit of water and stir continuously until the sauce thickens. Add the tofu back into the pan and coat with the sauce.
- Serve the meal: In serving bowls, place the steamed rice on one side, teriyaki tofu on the other, and ladle the miso soup into small bowls. Garnish with extra green onions if desired. Enjoy your meal!
