Teriyaki Beef with Steamed Rice and Miso Soup

Ingredients
- 500 gms (1.11 lbs) beef sirloin
- 120 mls (0.5 cup) soy sauce
- 60 mls (0.25 cup) mirin
- 2 tbsps sake
- 2 tbsps sugar
- 2 garlic cloves
- 1 tbsp ginger
- 480 mls (2 cups) white rice
- 960 mls (4 cups) water
- 3 tbsps miso paste
- 200 gms (0.44 lb) tofu
- 2 green onions
- 960 mls (4 cups) dashi
Instructions
- Cut the beef sirloin into thin strips.
- In a bowl, mix soy sauce, mirin, sake, sugar, minced garlic, and grated ginger. Add the beef and marinate for at least 30 minutes.
- Rinse the rice under cold water until the water runs clear. Combine rice and water in a rice cooker or a pot. Cook according to the rice cooker's instructions or bring to a boil, then simmer covered until water is absorbed and rice is tender.
- In a pot, bring the dashi to a boil. Lower the heat and dissolve the miso paste in the dashi. Add cubed tofu and simmer for 2-3 minutes. Chop green onions and add to the soup just before serving.
- Heat a skillet over medium-high heat. Remove the beef from the marinade and cook in the skillet, stirring often, until cooked through (about 5-7 minutes).
- Serve the teriyaki beef over steamed rice with a side of miso soup.
Notes
- This recipe yields 4 servings.
- It's best to marinate the beef for at least 30 minutes.
