Szechuan Tofu Stir-Fry

Ingredients
- 400 gms (0.89 lb) tofu, firm
- 2 tbsps soy sauce
- 1 tbsp chili paste
- 2 tsps Szechuan peppercorns
- 1 tbsp ginger, minced
- 2 tsps garlic, minced
- 1 bell pepper, sliced
- 2 green onions, chopped
- 2 tbsps vegetable oil
- 1 tsp sugar
- 1 tbsp rice vinegar
Instructions
- Drain and press the tofu for at least 15 minutes then cut into cubes.
- Heat 1 tablespoon of vegetable oil in a pan over medium heat.
- Add tofu cubes and fry until golden on all sides. Remove and set aside.
- In the same pan, add remaining vegetable oil and sauté garlic and ginger for 30 seconds.
- Add sliced bell pepper and cook until slightly tender, about 2-3 minutes.
- Stir in Szechuan peppercorns and chili paste, mixing well.
- Return tofu to the pan and add soy sauce, sugar, and rice vinegar.
- Toss everything to combine and heat through.
- Garnish with chopped green onions before serving.
Notes
- For a more authentic taste, use freshly ground Szechuan peppercorns.
- Adjust the amount of chili paste based on your heat preference.
