Ingredients

  • 4 bell peppers
  • 450 gms (1 lb) ground turkey
  • 240 mls (1 cup) feta cheese
  • 1 onion
  • 2 garlic cloves
  • 240 mls (1 cup) tomato sauce
  • 240 mls (1 cup) cooked rice
  • 2 tbsps olive oil
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish.
  3. In a skillet, heat olive oil over medium heat. Add the onion and garlic, and cook until softened.
  4. Add the ground turkey to the skillet and cook until browned. Season with salt and pepper.
  5. Stir in the cooked rice, feta cheese, and half of the tomato sauce.
  6. Stuff the bell peppers with the turkey mixture and pour the remaining tomato sauce over the top.
  7. Cover the baking dish with foil and bake for 25-30 minutes, or until the peppers are tender.
  8. Remove from the oven and let cool slightly before serving.
