Ingredients
- 2 white fish fillets
- 30 gms (0.07 lb) fresh ginger
- 3 scallions
- 2 tbsps soy sauce
- 1 tbsp rice wine or dry sherry
- 2 tsps sesame oil
- 1 tsp salt
- 0.5 tsp white pepper
Instructions
- Clean and pat dry the fish fillets. Season them with salt and white pepper.
- Slice the ginger into thin julienne strips.
- Cut the scallions into 2-inch lengths, then slice them lengthwise into thin strips.
- Place the fish fillets on a heatproof plate that fits inside your steamer. Arrange half of the ginger on top of the fish.
- Set up your steamer and bring the water to a boil. Place the plate of fish in the steamer, cover, and steam for about 8-10 minutes, or until the fish flakes easily with a fork.
- While the fish is steaming, mix the soy sauce and rice wine or dry sherry in a small bowl.
- Once the fish is cooked, carefully remove the plate from the steamer. Drain any excess liquid from the plate.
- Sprinkle the remaining ginger and the scallions over the fish. Drizzle the soy sauce mixture over the top.
- Heat the sesame oil until it is hot but not smoking, and pour it over the ginger and scallions to release their aroma.
- Serve the steamed fish hot with steamed rice or vegetables.
