Ingredients

  • 2 white fish fillets
  • 30 gms (0.07 lb) fresh ginger
  • 3 scallions
  • 2 tbsps soy sauce
  • 1 tbsp rice wine or dry sherry
  • 2 tsps sesame oil
  • 1 tsp salt
  • 0.5 tsp white pepper

Instructions

  1. Clean and pat dry the fish fillets. Season them with salt and white pepper.
  2. Slice the ginger into thin julienne strips.
  3. Cut the scallions into 2-inch lengths, then slice them lengthwise into thin strips.
  4. Place the fish fillets on a heatproof plate that fits inside your steamer. Arrange half of the ginger on top of the fish.
  5. Set up your steamer and bring the water to a boil. Place the plate of fish in the steamer, cover, and steam for about 8-10 minutes, or until the fish flakes easily with a fork.
  6. While the fish is steaming, mix the soy sauce and rice wine or dry sherry in a small bowl.
  7. Once the fish is cooked, carefully remove the plate from the steamer. Drain any excess liquid from the plate.
  8. Sprinkle the remaining ginger and the scallions over the fish. Drizzle the soy sauce mixture over the top.
  9. Heat the sesame oil until it is hot but not smoking, and pour it over the ginger and scallions to release their aroma.
  10. Serve the steamed fish hot with steamed rice or vegetables.
