Spicy Tofu Tacos with Avocado Salsa

Ingredients
- 1 extra-firm tofu
- 2 tbsps olive oil
- 1 tsp chili powder
- 1 tsp cumin powder
- 1 tsp garlic powder
- 1 tsp paprika
- 0.5 tsp salt
- 0.5 tsp black pepper
- 8 corn tortillas
- 2 ripe avocados
- 2 tbsps lime juice
- 0.5 red onion
- 60 mls (0.25 cup) cilantro
- 1 jalapeno (optional)
- 0.25 tsp salt (for salsa)
Instructions
- Drain tofu and press to remove excess water. Once pressed, crumble tofu into small pieces.
- Heat olive oil in a pan over medium heat. Add crumbled tofu, chili powder, cumin powder, garlic powder, paprika, salt, and black pepper. Cook for 8-10 minutes until tofu is slightly crispy.
- In a medium bowl, mash avocados. Add lime juice, finely chopped red onion, chopped cilantro, diced jalapeno (if using), and salt. Mix well to combine.
- Heat corn tortillas in a skillet or directly over a gas flame until warm and slightly charred.
- Assemble tacos by placing a portion of spicy tofu into each tortilla. Top with avocado salsa. Serve immediately.
