Ingredients

  • 392 gms (0.87 lb) firm tofu
  • 2 tbsps vegetable oil
  • 3 garlic, minced cloves
  • 2 red chili, finely sliced
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 3 tbsps soy sauce
  • 1 tbsp dark soy sauce
  • 1 tsp sugar
  • 240 mls (1 cup) fresh basil leaves
  • 1 lime

Instructions

  1. Drain the tofu and press to remove excess water. Cut into bite-sized cubes.
  2. Heat 1 tablespoon of vegetable oil in a wok or large frying pan over medium-high heat. Add the tofu and fry until golden brown on all sides. Remove from the pan and set aside.
  3. In the same pan, add the remaining tablespoon of oil. Add the minced garlic and sliced red chili, and stir-fry for about 30 seconds or until fragrant.
  4. Add the sliced onion and bell pepper to the pan. Stir-fry for 2-3 minutes until they begin to soften.
  5. Return the tofu to the pan and add the soy sauce, dark soy sauce, and sugar. Stir to combine and heat through.
  6. Remove the pan from the heat and stir in the fresh basil leaves until they wilt.
  7. Squeeze fresh lime juice over the stir-fry and serve immediately with steamed rice.
