Spicy Thai Basil Tofu Stir-Fry

Ingredients
- 392 gms (0.87 lb) firm tofu
- 2 tbsps vegetable oil
- 3 garlic, minced cloves
- 2 red chili, finely sliced
- 1 onion, sliced
- 1 bell pepper, sliced
- 3 tbsps soy sauce
- 1 tbsp dark soy sauce
- 1 tsp sugar
- 240 mls (1 cup) fresh basil leaves
- 1 lime
Instructions
- Drain the tofu and press to remove excess water. Cut into bite-sized cubes.
- Heat 1 tablespoon of vegetable oil in a wok or large frying pan over medium-high heat. Add the tofu and fry until golden brown on all sides. Remove from the pan and set aside.
- In the same pan, add the remaining tablespoon of oil. Add the minced garlic and sliced red chili, and stir-fry for about 30 seconds or until fragrant.
- Add the sliced onion and bell pepper to the pan. Stir-fry for 2-3 minutes until they begin to soften.
- Return the tofu to the pan and add the soy sauce, dark soy sauce, and sugar. Stir to combine and heat through.
- Remove the pan from the heat and stir in the fresh basil leaves until they wilt.
- Squeeze fresh lime juice over the stir-fry and serve immediately with steamed rice.

- Adjust the amount of chili to suit your spice tolerance.
