- 4 Chicken thighs
- 200 gms (0.44 lb) Chorizo sausage
- 500 gms (1.11 lbs) Potatoes
- 1 Red bell pepper
- 1 Onion
- 4 Garlic cloves
- 2 tsps Paprika
- 2 tbsps Olive oil
- 1 tsp Salt
- 1 tsp Black pepper
- 2 tbsps Fresh parsley
Instructions
- Preheat the oven to 200°C (390°F).
- Cut the potatoes, red bell pepper, and onion into chunks. Peel and slice the garlic cloves.
- Place the chicken thighs, chorizo, potatoes, red bell pepper, onion, and garlic in a large baking dish.
- Drizzle olive oil over the ingredients, then sprinkle with paprika, salt, and black pepper. Toss everything together to coat.
- Bake in the preheated oven for about 45 minutes or until the chicken is cooked through and the potatoes are tender.
- Garnish with fresh parsley before serving.
