Ingredients
- 500 gms (1.11 lbs) pork tenderloin
- 60 mls (0.25 cup) olive oil
- 60 mls (0.25 cup) lemon juice
- 4 garlic cloves
- 2 tsps dried oregano
- 1 tsp salt
- 0.5 tsp black pepper
- 1 cucumber
- 240 mls (1 cup) greek yogurt
- 2 tbsps fresh dill
- 1 red onion
- 3 tomato
- 1 green bell pepper
- 100 gms (0.22 lb) feta cheese
- 30 mls (0.13 cup) red wine vinegar
- 60 mls (0.25 cup) extra virgin olive oil
Instructions
- Cut pork tenderloin into small cubes for skewering.
- In a bowl, combine olive oil, lemon juice, minced garlic cloves, oregano, salt, and black pepper. Add pork cubes and marinate for at least 1 hour in the refrigerator.
- Preheat the grill to medium-high heat (200°C / 392°F). Thread marinated pork onto skewers.
- Grill the pork skewers for 10-12 minutes, turning occasionally, until the pork is cooked through.
- Grate the cucumber and squeeze out excess moisture. Combine with Greek yogurt, minced garlic, and dill to make the tzatziki. Season with salt to taste.
- Chop red onion, tomatoes, green bell pepper into large pieces. Combine in a bowl with feta cheese cubes. Dress with a mix of red wine vinegar and extra virgin olive oil.
- Serve grilled pork skewers with tzatziki and Greek salad on the side.
Notes
- Marinate the pork for at least 1 hour to enhance the flavor.
- Tzatziki can be prepared a day in advance.
