Roast Pork with Crackling and Apple Sauce

Ingredients
- 1 pork roast with skin
- 2 tbsps olive oil
- 1 tbsp sea salt
- 2 tsps black pepper
- 4 apples
- 2 tbsps lemon juice
- 2 tbsps sugar
- 100 mls (0.42 cup) water
Instructions
- Preheat the oven to 220°C (430°F).
- Pat the pork roast dry with kitchen paper. Rub the olive oil, sea salt, and black pepper into the scored skin.
- Place the pork roast on a rack in a roasting tray and roast for 30 minutes.
- Reduce the oven temperature to 180°C (350°F) and continue roasting for 1.5 to 2 hours, or until the pork is cooked through and the skin is crispy.
- While the pork is roasting, peel, core, and chop the apples. Place them in a saucepan with lemon juice, sugar, and water.
- Cook the apples over medium heat until they’re soft and beginning to break down, stirring occasionally.
- Mash the apples to your desired consistency and set aside.
- Once cooked, allow the pork to rest for 10 minutes before carving.
- Serve the roast pork with the crackling and apple sauce on the side.
Notes
- Ensure the pork skin is scored for best results.
- Use fresh apples for a more flavorful sauce.
