Roast Pork with Apple Sauce and Yorkshire Pudding

Ingredients
- 1800 gms (4 lbs) pork loin
- 2 tbsps salt
- 1 tsp pepper
- 4 apples
- 240 mls (1 cup) sugar
- 240 mls (1 cup) water
- 4 eggs
- 240 mls (1 cup) all-purpose flour
- 240 mls (1 cup) milk
- 4 tbsps vegetable oil
Instructions
- Preheat oven to 350°F (175°C).
- Season the pork loin with salt and pepper.
- Place the pork in a roasting pan and roast for about 2 hours, or until the internal temperature reaches 145°F (63°C).
- While the pork is roasting, peel, core, and slice the apples.
- In a saucepan, combine the apples, sugar, and water. Cook over medium heat until the apples are soft and the mixture thickens, about 20 minutes. Set aside.
- For the Yorkshire pudding, preheat the oven to 450°F (230°C).
- In a bowl, beat the eggs and then whisk in the flour and milk until smooth.
- Pour 1 tbsp of vegetable oil into each compartment of a 12-hole muffin tin and heat in the oven for about 5 minutes, until the oil is very hot.
- Pour the batter into the hot oil-filled compartments and bake for 15-20 minutes, or until the puddings are well-risen and golden brown.
- Serve the roast pork with the apple sauce and Yorkshire pudding.

- Preheat oven to the required temperature before starting.
- Ensure pork is cooked to a safe internal temperature of at least 145°F (63°C).
