Ingredients

  • 4 apples
  • 240 mls (1 cup) sugar
  • 240 mls (1 cup) water
  • 4 eggs
  • 240 mls (1 cup) all-purpose flour
  • 240 mls (1 cup) milk
  • 4 tbsps vegetable oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Season the pork loin with salt and pepper.
  3. Place the pork in a roasting pan and roast for about 2 hours, or until the internal temperature reaches 145°F (63°C).
  4. While the pork is roasting, peel, core, and slice the apples.
  5. In a saucepan, combine the apples, sugar, and water. Cook over medium heat until the apples are soft and the mixture thickens, about 20 minutes. Set aside.
  6. For the Yorkshire pudding, preheat the oven to 450°F (230°C).
  7. In a bowl, beat the eggs and then whisk in the flour and milk until smooth.
  8. Pour 1 tbsp of vegetable oil into each compartment of a 12-hole muffin tin and heat in the oven for about 5 minutes, until the oil is very hot.
  9. Pour the batter into the hot oil-filled compartments and bake for 15-20 minutes, or until the puddings are well-risen and golden brown.
  10. Serve the roast pork with the apple sauce and Yorkshire pudding.
