Ingredients
- 1000 gms (2.22 lbs) Pork loin
- 4 Apples
- 4 Carrots
- 6 Potatoes
- 1 Onion
- 4 Garlic cloves
- 2 tbsps Olive oil
- 1 tsp Salt
- 1 tsp Black pepper
- 2 tsps Rosemary
- 2 tsps Thyme
- 240 mls (1 cup) Chicken stock
Instructions
- Preheat the oven to 180°C (350°F).
- Score the skin of the pork loin and rub with salt, pepper, thyme, and rosemary.
- Place the pork loin in a roasting pan and roast for 1.5 hours.
- In a separate pan, sauté chopped apples, carrots, potatoes, onion, and garlic in olive oil.
- Add chicken stock to the vegetables and let simmer.
- Once the pork is cooked, let it rest before slicing.
- Serve the sliced pork with the apple sauce and vegetables on the side.
