  • 1000 gms (2.22 lbs) Pork loin
  • 4 Apples
  • 4 Carrots
  • 6 Potatoes
  • 1 Onion
  • 4 Garlic cloves
  • 2 tbsps Olive oil
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 tsps Rosemary
  • 2 tsps Thyme
  • 240 mls (1 cup) Chicken stock

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Score the skin of the pork loin and rub with salt, pepper, thyme, and rosemary.
  3. Place the pork loin in a roasting pan and roast for 1.5 hours.
  4. In a separate pan, sauté chopped apples, carrots, potatoes, onion, and garlic in olive oil.
  5. Add chicken stock to the vegetables and let simmer.
  6. Once the pork is cooked, let it rest before slicing.
  7. Serve the sliced pork with the apple sauce and vegetables on the side.
