Pork Souvlaki with Tzatziki Sauce and Greek Salad

Ingredients
- 500 gms (1.11 lbs) pork tenderloin
- 60 mls (0.25 cup) olive oil
- 30 mls (0.13 cup) lemon juice
- 4 garlic cloves
- 2 tsps dried oregano
- 1 tsp salt
- 1 tsp black pepper
- 1 cucumber
- 250 mls (1.04 cups) Greek yogurt
- 1 tbsp dill
- 0.5 red onion
- 2 tomato
- 100 gms (0.22 lb) kalamata olives
- 100 gms (0.22 lb) feta cheese
Instructions
- Cut pork tenderloin into 1-inch cubes.
- In a large mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
- Add pork cubes to the marinade, mix well to coat all pieces. Cover and refrigerate for at least 2 hours.
- Peel and grate the cucumber. Squeeze out excess moisture using a clean towel.
- In a bowl, combine grated cucumber, Greek yogurt, minced garlic, chopped dill, and a pinch of salt. Mix well and refrigerate.
- Chop red onion and tomato into bite-sized pieces. In a salad bowl, combine red onion, tomato, kalamata olives, and crumbled feta cheese.
- Thread marinated pork onto skewers.
- Preheat grill to medium-high heat (around 200°C/400°F).
- Grill pork skewers for about 10-12 minutes, turning occasionally, until fully cooked.
- Serve pork souvlaki with tzatziki sauce and Greek salad.
Notes
- Make sure to marinate the pork for at least 2 hours for the best flavor
- Tzatziki sauce can be made ahead and refrigerated
