Ingredients

  • 1 cucumber
  • 250 mls (1.04 cups) Greek yogurt
  • 1 tbsp dill
  • 0.5 red onion
  • 2 tomato
  • 100 gms (0.22 lb) kalamata olives
  • 100 gms (0.22 lb) feta cheese

Instructions

  1. Cut pork tenderloin into 1-inch cubes.
  2. In a large mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
  3. Add pork cubes to the marinade, mix well to coat all pieces. Cover and refrigerate for at least 2 hours.
  4. Peel and grate the cucumber. Squeeze out excess moisture using a clean towel.
  5. In a bowl, combine grated cucumber, Greek yogurt, minced garlic, chopped dill, and a pinch of salt. Mix well and refrigerate.
  6. Chop red onion and tomato into bite-sized pieces. In a salad bowl, combine red onion, tomato, kalamata olives, and crumbled feta cheese.
  7. Thread marinated pork onto skewers.
  8. Preheat grill to medium-high heat (around 200°C/400°F).
  9. Grill pork skewers for about 10-12 minutes, turning occasionally, until fully cooked.
  10. Serve pork souvlaki with tzatziki sauce and Greek salad.
