Nasi Goreng Ayam (Indonesian Chicken Fried Rice)

Ingredients
- 200 gms (0.44 lb) Chicken breast fillet, diced
- 720 mls (3 cups) Cooked white rice
- 2 Eggs, beaten
- 3 Garlic, minced cloves
- 1 Onion, chopped
- 2 tbsps Kecap manis (sweet soy sauce)
- 1 tbsp Soy sauce
- 1 tsp Salt
- 2 tbsps Cooking oil
Instructions
- Heat 1 tablespoon of cooking oil in a wok or large pan over medium-high heat.
- Add the beaten eggs and scramble until fully cooked. Remove from the pan and set aside.
- Add the remaining cooking oil to the pan. Add the minced garlic and chopped onion, sauté until fragrant.
- Add the diced chicken breast and cook until no longer pink.
- Add the cooked white rice to the pan. Use a spatula to break up any clumps and mix well with the chicken.
- Add the kecap manis, soy sauce, and salt. Stir well to combine.
- Add the scrambled eggs back to the pan and mix with the rice.
- Cook for another 2-3 minutes to heat everything through.
- Serve hot and enjoy your delicious Nasi Goreng Ayam!
- Top with fried shallots or chopped scallions for extra flavor and crunch.

- Feel free to add vegetables like peas, carrots, and bell peppers for extra flavor and nutrition
- Use cold cooked rice for best results
