Ingredients
- 1 Boneless, skinless chicken breast
- 2 Bell peppers
- 1 Onion
- 1 Lime
- 1 tsp Cumin powder
- 1 tsp Chili powder
- 1 tsp Paprika
- 1 tsp Salt
- 1 tsp Black pepper
- 2 tbsps Olive oil
- 6 Tortillas
- 240 mls (1 cup) Sour cream
- 240 mls (1 cup) Guacamole
Instructions
- Slice the chicken, bell peppers, and onion into strips.
- In a bowl, mix the chicken strips with cumin, chili powder, paprika, salt, black pepper, and the juice of half a lime. Let it marinate for at least 30 minutes.
- In a large skillet, heat olive oil over medium-high heat. Add the marinated chicken and cook until browned and cooked through.
- Push the chicken to one side of the skillet and add the sliced bell peppers and onions. Cook until the vegetables are tender.
- Squeeze the remaining half of the lime over the chicken and vegetables.
- Warm the tortillas in a separate skillet or microwave.
- Serve the chicken and vegetables on the warm tortillas with sour cream and guacamole.
Notes
- Marinate the chicken for at least 30 minutes for better flavor
