Mediterranean Tofu Souvlaki with Tzatziki

Ingredients
- 400 gms (0.89 lb) tofu
- 2 tbsps olive oil
- 2 tbsps lemon juice
- 3 clovess garlic
- 2 tsps oregano
- 1 tsp salt
- 1 cucumber
- 200 mls (0.83 cup) Greek yogurt
- 1 tbsp dill
- 1 tbsp mint
- 1 tbsp olive oil for tzatziki
- 0.5 tsp salt for tzatziki
- 0.5 tsp pepper
Instructions
- Press tofu to remove excess water and cut into cubes.
- In a large bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
- Add tofu cubes to the marinade and let it sit for at least 30 minutes.
- Grate the cucumber and squeeze out the excess water.
- In another bowl, combine Greek yogurt, grated cucumber, chopped dill, chopped mint, a tablespoon of olive oil, and salt for tzatziki.
- Preheat grill to 180°C (356°F).
- Thread tofu cubes onto skewers.
- Grill tofu skewers for about 10-15 minutes, turning occasionally, until they are golden and crispy.
- Serve the tofu souvlaki hot with a side of tzatziki sauce.
