  • 240 mls (1 cup) Plain Greek yogurt
  • 1 Cucumber, grated and squeezed, medium
  • 2 tbsps Fresh dill, chopped
  • 1 Garlic, minced clove
  • 1 tbsp Lemon juice
  • 1 tsp Salt
  • 1 tsp Black pepper

Instructions

  1. In a bowl, mix together olive oil, lemon juice, minced garlic, oregano, salt, and pepper to make the marinade.
  2. Cut the chicken breasts into bite-sized pieces and coat them with the marinade. Let the chicken marinate for at least 30 minutes.
  3. While the chicken is marinating, prepare the tzatziki sauce by combining Greek yogurt, grated cucumber, chopped dill, minced garlic, lemon juice, salt, and pepper in a bowl. Mix well and refrigerate until ready to serve.
  4. Thread the marinated chicken pieces onto the soaked skewers.
  5. Preheat the grill to medium-high heat and grill the chicken skewers for about 8-10 minutes, turning occasionally, until cooked through and charred in spots.
  6. Serve the Mediterranean chicken skewers with the tzatziki sauce on the side for dipping.
