Mediterranean Chicken Skewers with Tzatziki Sauce

Ingredients
- 450 gms (1 lb) Boneless, skinless chicken breasts
- 2 tbsps Olive oil
- 2 tbsps Lemon juice
- 2 Garlic, minced cloves
- 1 tsp Dried oregano
- 1 tsp Salt
- 1 tsp Black pepper
- 240 mls (1 cup) Plain Greek yogurt
- 1 Cucumber, grated and squeezed, medium
- 2 tbsps Fresh dill, chopped
- 1 Garlic, minced clove
- 1 tbsp Lemon juice
- 1 tsp Salt
- 1 tsp Black pepper
Instructions
- In a bowl, mix together olive oil, lemon juice, minced garlic, oregano, salt, and pepper to make the marinade.
- Cut the chicken breasts into bite-sized pieces and coat them with the marinade. Let the chicken marinate for at least 30 minutes.
- While the chicken is marinating, prepare the tzatziki sauce by combining Greek yogurt, grated cucumber, chopped dill, minced garlic, lemon juice, salt, and pepper in a bowl. Mix well and refrigerate until ready to serve.
- Thread the marinated chicken pieces onto the soaked skewers.
- Preheat the grill to medium-high heat and grill the chicken skewers for about 8-10 minutes, turning occasionally, until cooked through and charred in spots.
- Serve the Mediterranean chicken skewers with the tzatziki sauce on the side for dipping.

- Soak wooden skewers in water for at least 30 minutes to prevent burning while grilling
