Lemon Herb Grilled Salmon with Garlic Mashed Potatoes

Ingredients
- 4 salmon fillets
- 1 lemon
- 2 tbsps olive oil
- 2 tbsps fresh dill
- 4 garlic cloves
- 4 potatoes
- 4 tbsps butter
- 120 mls (0.5 cup) milk
- 1 tsp salt
- 1 tsp pepper
- 2 tbsps parsley
Instructions
- Preheat the grill to medium-high heat.
- Zest and juice the lemon.
- In a small bowl, mix lemon juice, olive oil, and chopped dill.
- Brush the salmon fillets with the lemon and herb mixture. Season with salt and pepper.
- Place salmon fillets on the grill, skin side down. Grill for 6-8 minutes per side, or until the salmon is fully cooked.
- Peel and chop the potatoes into quarters.
- Boil the potatoes in salted water for 15-20 minutes, or until tender.
- In a small pan, sauté the chopped garlic in 2 tbsp of butter until golden brown.
- Drain the potatoes and return to the pot.
- Add the remaining butter, sautéed garlic, and milk to the potatoes. Mash until smooth.
- Season the mashed potatoes with salt and pepper to taste.
- Serve the grilled salmon with a side of garlic mashed potatoes, garnish with chopped parsley.
