  • 500 gms (1.11 lbs) ground beef
  • 1 onion
  • 50 gms (0.11 lb) fresh parsley
  • 1 tsp ground allspice
  • 1 tsp ground black pepper
  • 1 tsp ground cumin
  • 1 tsp salt
  • 2 tbsps olive oil
  • 400 gms (0.89 lb) chickpeas
  • 60 mls (0.25 cup) tahini
  • 60 mls (0.25 cup) lemon juice
  • 2 garlic cloves
  • 100 gms (0.22 lb) cooked bulgur
  • 20 gms (0.04 lb) fresh mint
  • 200 gms (0.44 lb) fresh tomatoes
  • 100 gms (0.22 lb) cucumber
  • 3 tbsps olive oil (for Tabbouleh)
  • 3 tbsps lemon juice (for Tabbouleh)

Instructions

  1. Preheat the oven to 190°C (375°F).
  2. In a large bowl, combine the ground beef, finely chopped onion, chopped parsley, allspice, black pepper, cumin, and salt. Mix well.
  3. Shape the beef mixture into long sausage-like shapes and place them on a baking sheet lined with parchment paper.
  4. Brush the Kafta with olive oil and bake in the preheated oven for 25-30 minutes or until fully cooked.
  5. While the Kafta is baking, prepare the hummus. In a food processor, combine chickpeas, tahini, lemon juice, garlic, and 2 tablespoons of olive oil. Blend until smooth. Add water if needed to achieve a creamy consistency.
  6. For the Tabbouleh, combine cooked bulgur, finely chopped parsley, mint, diced tomatoes, and cucumber in a large bowl.
  7. Dress the Tabbouleh with olive oil and lemon juice, and season with salt to taste.
  8. Serve the Kafta hot, alongside hummus and fresh Tabbouleh.
