  • 1 Onion medium, chopped
  • 2 Garlic cloves, minced
  • 240 mls (1 cup) Frozen mixed vegetables
  • 240 mls (1 cup) Beef broth
  • 1 tbsp Worcestershire sauce
  • 1 Cauliflower head, chopped into florets
  • 2 tbsps Butter
  • 240 mls (1 cup) Heavy cream
  • 1 tsp Salt
  • 1 tsp Pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, cook the ground beef, onion, and garlic until the beef is browned and the vegetables are tender. Drain any excess fat.
  3. Stir in the mixed vegetables, beef broth, and Worcestershire sauce. Simmer for 5-10 minutes until the mixture thickens slightly.
  4. Meanwhile, cook the cauliflower in boiling water until very tender. Drain and transfer to a food processor.
  5. Add the butter, heavy cream, salt, and pepper to the cauliflower in the food processor. Blend until smooth and creamy.
  6. In a baking dish, spread the beef mixture evenly on the bottom. Top with the cauliflower mash.
  7. Bake in the preheated oven for 20-25 minutes, or until the top is lightly browned.
