Ingredients

- 480 mls (2 cups) cauliflower rice
- 1 avocado
- 60 mls (0.25 cup) cilantro
Instructions
- Slice the chicken breasts into thin strips.
- Slice the bell peppers and onion into thin strips.
- In a large bowl, combine olive oil, lime juice, chili powder, paprika, garlic powder, cumin, salt, and black pepper.
- Add the sliced chicken, bell peppers, and onion to the bowl and toss well to coat.
- Heat a large skillet over medium-high heat. Add the chicken, bell peppers, and onion to the skillet and cook until the chicken is cooked through and the vegetables are tender, about 8-10 minutes.
