  • 4 cod fillets
  • 480 mls (2 cups) cherry tomatoes
  • 2 tbsps olive oil
  • 3 garlic cloves
  • 1 lemon
  • 60 mls (0.25 cup) fresh basil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the cod fillets and pat them dry with paper towels.
  3. Place the cod fillets in a baking dish.
  4. In a mixing bowl, combine the cherry tomatoes, olive oil, minced garlic, salt, black pepper, and red pepper flakes.
  5. Pour the tomato mixture over the cod fillets.
  6. Cut the lemon into thin slices and place them on top of the cod and tomatoes.
  7. Bake in the preheated oven for about 20 minutes, or until the cod is cooked through and flakes easily with a fork.
  8. Remove from the oven and sprinkle with fresh basil leaves before serving.
