Ingredients
- 4 cod fillets
- 480 mls (2 cups) cherry tomatoes
- 2 tbsps olive oil
- 3 garlic cloves
- 1 lemon
- 60 mls (0.25 cup) fresh basil
- 1 tsp salt
- 0.5 tsp black pepper
- 0.25 tsp red pepper flakes
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the cod fillets and pat them dry with paper towels.
- Place the cod fillets in a baking dish.
- In a mixing bowl, combine the cherry tomatoes, olive oil, minced garlic, salt, black pepper, and red pepper flakes.
- Pour the tomato mixture over the cod fillets.
- Cut the lemon into thin slices and place them on top of the cod and tomatoes.
- Bake in the preheated oven for about 20 minutes, or until the cod is cooked through and flakes easily with a fork.
- Remove from the oven and sprinkle with fresh basil leaves before serving.
