Indonesian Grilled Fish with Sambal Matah

Ingredients
- 4 Fish fillets (such as snapper or grouper)
- 3 tbsps Lime juice
- 1 tsp Salt
- 1 tsp Pepper
- 240 mls (1 cup) Sambal Matah - see below
Sambal Matah
- 7 red chilies
- 3 shallots
- 2 garlic cloves
- 2 kaffir lime leaves
- 1 tbsp lime juice
- 1 lemongrass stalk
- 3 tbsps olive oil
Instructions
- In a bowl, mix lime juice, salt, and pepper. Marinate the fish fillets in this mixture for at least 1 hour in the fridge.
- For the Sambal Matah: In a separate bowl, combine sliced chilies, shallots, finely sliced kaffir lime leaves, finely sliced lemongrass stalk (tender white parts only), minced garlic, lime juice and olive oil.
- Preheat the grill to medium-high heat. Grill the marinated fish fillets for 4-5 minutes on each side or until cooked through.
- Serve the grilled fish with a generous topping of Sambal Matah on top.
Notes
- Make sure to marinate the fish for at least 1 hour for best flavor
- Adjust the number of chilies to taste - between 6-10 is good for this dish
