  • 240 mls (1 cup) Peanut butter
  • 240 mls (1 cup) Coconut milk
  • 2 tbsps Soy sauce
  • 2 tbsps Brown sugar

Instructions

  1. In a bowl, mix soy sauce, honey, lime juice, minced garlic, grated ginger, and ground cumin.
  2. Cut the chicken thighs into strips and add them to the marinade. Let it marinate for at least 2 hours.
  3. Thread the marinated chicken strips onto skewers and grill them until cooked through.
  4. In a saucepan, combine peanut butter, coconut milk, soy sauce, and brown sugar. Heat until the sauce thickens.
  5. Serve the grilled chicken satay with the peanut sauce on the side.
