Indonesian Chicken Satay with Peanut Sauce

Ingredients
- 450 gms (1 lb) Boneless, skinless chicken thighs
- 1 tbsp Soy sauce
- 2 tbsps Honey
- 1 tbsp Lime juice
- 2 Garlic cloves, minced
- 1 tsp Ginger
- 1 tsp Ground cumin
- 240 mls (1 cup) Peanut butter
- 240 mls (1 cup) Coconut milk
- 2 tbsps Soy sauce
- 2 tbsps Brown sugar
Instructions
- In a bowl, mix soy sauce, honey, lime juice, minced garlic, grated ginger, and ground cumin.
- Cut the chicken thighs into strips and add them to the marinade. Let it marinate for at least 2 hours.
- Thread the marinated chicken strips onto skewers and grill them until cooked through.
- In a saucepan, combine peanut butter, coconut milk, soy sauce, and brown sugar. Heat until the sauce thickens.
- Serve the grilled chicken satay with the peanut sauce on the side.
Notes
- Marinate the chicken for at least 2 hours for best flavor
