  2. In a blender, combine shallots, garlic, ginger, turmeric, lemongrass, candlenuts, and red chilies. Blend until you get a smooth paste.
  3. In a bowl, mix the spice paste with salt, sugar, sweet soy sauce, and oil.
  4. Rub the mixture all over the fish, making sure to get it into the slits.
  5. Let the fish marinate for at least 30 minutes to 1 hour to absorb the flavors.
  6. Preheat the grill to medium-high heat. If using banana leaves, wrap the fish in them to prevent sticking and to add an extra layer of flavor.
