Ingredients
- 1 whole fish (like snapper, tilapia, or mackerel)
- 6 shallots
- 5 garlic cloves
- 1 ginger, inch
- 1 turmeric, inch
- 1 lemongrass stalk
- 4 candlenuts (or macadamia nuts)
- 3 red chilies
- 1 tsp salt
- 1 tbsp sugar
- 2 tbsps sweet soy sauce (kecap manis)
- 2 tbsps oil
- 1 lime
- 2 banana leaves (optional, for wrapping)
Instructions
- Clean the fish and make slits on both sides for better marinade absorption.
- In a blender, combine shallots, garlic, ginger, turmeric, lemongrass, candlenuts, and red chilies. Blend until you get a smooth paste.
- In a bowl, mix the spice paste with salt, sugar, sweet soy sauce, and oil.
- Rub the mixture all over the fish, making sure to get it into the slits.
- Let the fish marinate for at least 30 minutes to 1 hour to absorb the flavors.
- Preheat the grill to medium-high heat. If using banana leaves, wrap the fish in them to prevent sticking and to add an extra layer of flavor.
- Grill the fish for about 6-8 minutes on each side, or until the fish is cooked through and has a nice char.
- Squeeze fresh lime juice over the grilled fish before serving.
