Ingredients
- 4 boneless, skinless chicken breasts
- 1 red bell pepper
- 1 yellow bell pepper
- 1 red onion
- 240 mls (1 cup) cherry tomatoes
- 240 mls (1 cup) olive oil
- 60 mls (0.25 cup) lemon juice
- 3 garlic cloves, minced
- 240 mls (1 cup) plain yogurt
- 2 tbsps paprika
- 1 tbsp cumin
- 1 tsp salt
- 1 tsp black pepper
Instructions
- In a bowl, mix olive oil, lemon juice, minced garlic, yogurt, paprika, cumin, salt, and black pepper to make the marinade
- Cut the chicken breasts into cubes and place them in the marinade, let it sit for at least 2 hours or overnight
- Cut the bell peppers and red onion into chunks
- Thread the marinated chicken, bell peppers, red onion, and cherry tomatoes onto skewers
- Preheat the grill to medium-high heat
- Grill the kebabs for about 10-15 minutes, turning occasionally, until the chicken is cooked through and vegetables are charred
