- 4 Portobello mushrooms
- 60 mls (0.25 cup) Olive oil
- 60 mls (0.25 cup) Balsamic vinegar
- 2 Garlic cloves
- 1 tsp Salt
- 0.5 tsp Black pepper
- 4 Burger buns
- 2 Sweet potatoes
- 2 tbsps Olive oil
- 1 tsp Paprika
- 1 tsp Salt
- 0.5 tsp Black pepper
Instructions
- Clean and stem the Portobello mushrooms.
- In a bowl, whisk together 0.25 cup of olive oil, balsamic vinegar, minced garlic, 1 tsp of salt, and 0.5 tsp of black pepper.
- Place the mushrooms in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes.
- Preheat your grill to medium-high heat.
- Peel the sweet potatoes and cut them into thin fries.
- Toss the sweet potato fries with 2 tbsp of olive oil, paprika, 1 tsp of salt, and 0.5 tsp of black pepper.
- Spread the fries on a baking sheet in a single layer and bake at 425°F (220°C) for 20-25 minutes, turning halfway through until crispy.
- Grill the marinated mushrooms for about 5-7 minutes on each side until tender.
- Toast the burger buns on the grill, if desired.
- Assemble the burgers by placing the grilled Portobello mushrooms on the buns and serving with the sweet potato fries.
