Instructions

  1. Clean and stem the Portobello mushrooms.
  2. In a bowl, whisk together 0.25 cup of olive oil, balsamic vinegar, minced garlic, 1 tsp of salt, and 0.5 tsp of black pepper.
  3. Place the mushrooms in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes.
  4. Preheat your grill to medium-high heat.
  5. Peel the sweet potatoes and cut them into thin fries.
  6. Toss the sweet potato fries with 2 tbsp of olive oil, paprika, 1 tsp of salt, and 0.5 tsp of black pepper.
  7. Spread the fries on a baking sheet in a single layer and bake at 425°F (220°C) for 20-25 minutes, turning halfway through until crispy.
  8. Grill the marinated mushrooms for about 5-7 minutes on each side until tender.
