  • 60 gms (0.13 lb) butter
  • 120 mls (0.5 cup) milk
  • 3 garlic
  • 1 tbsp parsley

Instructions

  1. In a bowl, mix lemon juice, olive oil, rosemary, thyme, two minced garlic cloves, salt, and pepper. Add the salmon fillets and marinate for at least 30 minutes.
  2. Preheat your grill to medium-high, approximately 205°C (400°F).
  3. While the salmon marinates, peel and cube the potatoes. Cook them in boiling water until tender, about 15-20 minutes.
  4. Drain the potatoes and return to the pot. Add butter, milk, and the remaining minced garlic clove. Mash until smooth. Season with salt and pepper to taste.
  5. Grill the salmon for about 5-7 minutes per side, or until it flakes easily with a fork.
  6. Serve grilled salmon with a portion of garlic mashed potatoes, garnished with chopped parsley.
