Grilled Lemon Herb Salmon with Garlic Mashed Potatoes

- 4 salmon fillets
- 60 mls (0.25 cup) lemon juice
- 45 mls (0.19 cup) olive oil
- 2 tbsps fresh rosemary
- 2 tbsps fresh thyme
- 2 garlic
- 1 tsp salt
- 0.5 tsp black pepper
- 800 gms (1.78 lbs) potatoes
- 60 gms (0.13 lb) butter
- 120 mls (0.5 cup) milk
- 3 garlic
- 1 tbsp parsley
Instructions
- In a bowl, mix lemon juice, olive oil, rosemary, thyme, two minced garlic cloves, salt, and pepper. Add the salmon fillets and marinate for at least 30 minutes.
- Preheat your grill to medium-high, approximately 205°C (400°F).
- While the salmon marinates, peel and cube the potatoes. Cook them in boiling water until tender, about 15-20 minutes.
- Drain the potatoes and return to the pot. Add butter, milk, and the remaining minced garlic clove. Mash until smooth. Season with salt and pepper to taste.
- Grill the salmon for about 5-7 minutes per side, or until it flakes easily with a fork.
- Serve grilled salmon with a portion of garlic mashed potatoes, garnished with chopped parsley.
