- 4 chicken breast
- 2 tbsps olive oil
- 3 tbsps lemon juice

- 1 tbsp fresh rosemary
- 1 tbsp fresh thyme
- 1 tsp salt
- 0.5 tsp black pepper
- 200 gms (0.44 lb) spinach
- 1 tbsp butter
- 1 onion
Instructions
- In a bowl, mix olive oil, lemon juice, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper.
- Marinate the chicken breasts in the mixture for at least 30 minutes.
- Preheat the grill to 200°C (392°F).
- Grill the chicken breasts for 6-7 minutes on each side until fully cooked.
- Meanwhile, heat butter in a pan over medium heat.
- Add chopped onion to the pan and sauté until translucent.
- Add the spinach and sauté for another 2 minutes until wilted.
- Serve the grilled chicken hot with the sautéed spinach on the side.
