Ingredients

  • 4 Fish fillets (such as halibut, cod, or salmon)
  • 240 mls (1 cup) Lemon juice
  • 240 mls (1 cup) Olive oil
  • 2 Garlic (minced) cloves
  • 240 mls (1 cup) Fresh parsley (chopped)
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 1 tsp Black pepper

Instructions

  1. In a bowl, mix together lemon juice, olive oil, garlic, parsley, oregano, salt, and black pepper to create the marinade.
  2. Place the fish fillets in a resealable plastic bag or shallow dish and pour the marinade over them. Make sure the fish is evenly coated. Marinate for at least 30 minutes in the refrigerator.
  3. Preheat the grill to medium-high heat. Remove the fish from the marinade and discard the remaining marinade.
  4. Grill the fish fillets for about 4-5 minutes per side, or until the fish is cooked through and easily flakes with a fork.
  5. Serve the grilled fish hot, garnished with extra chopped parsley and lemon wedges.
