  • 4 pita breads
  • 300 gms (0.67 lb) fresh vegetables (tomato, onion, lettuce)

Instructions

  1. In a large bowl, mix olive oil, lemon juice, garlic, dried oregano, dried thyme, ground cumin, salt, and black pepper.
  2. Add the cubed tofu to the marinade and toss to coat evenly. Cover and refrigerate for at least 1 hour or preferably overnight.
  3. Preheat the grill to medium-high heat (about 200°C or 400°F).
  4. Thread the marinated tofu cubes onto skewers.
  5. Grill the tofu skewers for 3-4 minutes on each side, until golden and slightly charred.
  6. While grilling, prepare the tzatziki sauce. In a medium bowl, combine the grated cucumber, plain Greek yogurt, olive oil, minced garlic, lemon juice, dill, salt, and black pepper. Mix well.
  7. Warm the pita breads on the grill for about 1-2 minutes on each side.
  8. Assemble the souvlaki by placing grilled tofu, fresh vegetables, and tzatziki sauce inside the warm pita breads.
  9. Serve immediately and enjoy!
