Ingredients
- 400 gms (0.89 lb) firm tofu, cubed
- 2 tbsps olive oil
- 2 tbsps lemon juice
- 3 garlic, minced
- 2 tsps dried oregano
- 1 tsp dried thyme
- 1 tsp ground cumin
- 1 tsp salt
- 0.5 tsp black pepper
- 1 cucumber, grated and squeezed
- 200 gms (0.44 lb) plain Greek yogurt
- 1 tbsp olive oil (for tzatziki)
- 1 garlic, minced (for tzatziki)
- 1 tbsp lemon juice (for tzatziki)
- 2 tsps dill, chopped
- 0.5 tsp salt (for tzatziki)
- 0.25 tsp black pepper (for tzatziki)
- 4 pita breads
- 300 gms (0.67 lb) fresh vegetables (tomato, onion, lettuce)
Instructions
- In a large bowl, mix olive oil, lemon juice, garlic, dried oregano, dried thyme, ground cumin, salt, and black pepper.
- Add the cubed tofu to the marinade and toss to coat evenly. Cover and refrigerate for at least 1 hour or preferably overnight.
- Preheat the grill to medium-high heat (about 200°C or 400°F).
- Thread the marinated tofu cubes onto skewers.
- Grill the tofu skewers for 3-4 minutes on each side, until golden and slightly charred.
- While grilling, prepare the tzatziki sauce. In a medium bowl, combine the grated cucumber, plain Greek yogurt, olive oil, minced garlic, lemon juice, dill, salt, and black pepper. Mix well.
- Warm the pita breads on the grill for about 1-2 minutes on each side.
- Assemble the souvlaki by placing grilled tofu, fresh vegetables, and tzatziki sauce inside the warm pita breads.
- Serve immediately and enjoy!
Notes
- This recipe serves 4 people.
- For best results, marinate the tofu overnight.
- Tzatziki sauce can be stored in the refrigerator for up to 3 days.
